Wine Maker Notes: This cuvée comes from a total of 3.7 hectares of vines all over 50 years old. Total production for this cuvée is under 2000 cases. The wine is fermented with natural yeasts in temperature controlled steel. It rests for 4 to 5 months on the lees – with 1 or 2 lees stirring.
This wine is bright laser beam of citrus fruit and mineral flavors. Pure and refreshing, a wonderful compliment to goat cheese, salads, sushi and sauteed fish dishes.
