Connoisseurs’ Guide 96/00: Perennially vying for top honors as one of the most impressive Cabernets of the year, HaLo is once again a magnificent effort that ranks with the most collectable wines around. It is amazingly deep with all of the richness and range for which one could ask, and its uncanny knack for being as impeccably balanced as it is so marvelously extracted is in full evidence. It is remarkably refined and very powerful at one and the same time, and, while fit with a full complement of ageworthy tannins, it neatly avoids even the slightest suggestion of coarseness. Think twice before pulling its cork before seven or eight years have passed, and rest assured that it will be lovely stuff to pour for special occasions over the next decade or two.
Tasting Notes: A true expression of our terroir, one can literally taste the flavors of our Hillspring vineyard in every sip of HaLo. Your nose is enchanted with botanical aromas of the oak forest which surrounds the vines as perfumed scents of earth, chocolate, bay leaf and cherry dance in the glass. The palate is rich with ample tannins and complex flavors of plum, black currant, tobacco and a touch of peppercorn.
Food Pairing: Bring out the flavors in the wine with the addition of thyme or black pepper over a prime cut of beef, pork or duck. Our favorites are wine braised short ribs or grilled beef tenderloin with a mushroom sauce.

About: Built in 1886, John and Janet Trefethen began restoring what is today the Trefethen winery in 1973. A national historic landmark and the only wooden gravity-flow winery in the Napa Valley, Trefethen is also one of Napa’s largest estate wineries, with its 600 acres of vineyards surrounding the winery. The Trefethen family creates Chardonnay, Cabernet Franc, Cabernet Sauvignon, Merlot and Riesling as well as limited quantities of Library Selection Chardonnay, Library Selection Cabernet Sauvignon and Reserve Cabernet Sauvignon.
